Wing Commander for 1,000 hours of flight time under a single pilot profile. Yes, 1,000 hours!
There's some overlap amongst the others; so if you're doing any flight over 300 miles check your progress against various achievements below to make sure you can get progress toward as many as possible in one go. E.g. do it at nighttime, in a plane you've not flown long haul before.

CommonComplete any activity.
The Activites are the Landing Challenges and Bush Trails off the main menu.
Short Stuff
CommonLand on a runway shorter than 2,000 feet, without using any assistance or bypassing any travel.
This is easily and quickly done in the Landing Challenges
By the Book
CommonRequest landing clearance from ATC at a towered airport, without using ATC assistance.
Working for the Weekend
UncommonComplete a weekly activity.
Weekly activities are shown on the homescreen. They tend to be harder than the regular Landing Challenges or Bush Trails. Complete any one.
Light Chop
UncommonLand at an airport where windspeeds are in excess of 5 knots, without using any assistance.
This is easily done in the Landing Challenges - perhaps in a larger aircraft like the 747 into JFK just to be less buffeted by the wind.
Mother Nature
UncommonAdjust the weather during a flight.
Must be done in free flight - not in the Activities/challenges.
Look Ma, No Hands!
UncommonUtilize autopilot for a total of 600 miles.
Deadstick Landing
UncommonAfter receiving landing clearance, switch off engines and successfully land on the runway.
Wheels Up, Wheels Down
UncommonComplete a non-stop flight of at least 300 miles from take-off to landing.
Do this gate to gate, and without assistance, to get <strong>My Way at the same time.
Or don't because you'll need many, many 300+ mile trips for 
Back-Up Plan
UncommonUtilize pre-flight Pushback Service to move aircraft, for a total distance of 1 mile.
Stay on Target
UncommonUse the Instrument Landing System (ILS) to complete a landing.
Start Me Up
UncommonManually start the Airbus A320neo's engines, without using Assistance.
A Few Bumps
RareLand at an airport where windspeeds are in excess of 15 knots, without using any assistance.
Easily done in the Landing Challenges - again in a larger aircraft like the 747 so as to be less affected by the wind.
Note this doesn't actually have to be a perfect landing. You can actually just hit the ground with the undercarriage and you'll still get the achievement even if you subsequently bounce/roll/crash...
Fill 'er Up!
RareRefuel at any ground fuel station.
On the Green
RareLand on a grass runway, without using any assistance.
Uphill Climb
RareLand on a runway that has at least a 12 degree incline, without using any assistance.
Road Trip
RareTaxi aircraft for a total distance of 100 miles.
This will come naturally while grinding out the other achievements, or you can just potter about on a large airport like JFK or LHR.
Pilot Program
RareAccumulate 50 hours of flight time in a single pilot profile.
Half way to <strong>Century Club, and not very far at all toward
Rubberneck
LegendaryUse the Smart Cam to view a star landmark for 3 seconds, from a distance of 550 yards or less.
In free flight planning, before starting, zooming in on cities and famous locations you can see landmarks - some of which are starred; e.g. Big Ben in London.
When flying, fly over slowly, use the external camera and enable smartcam -> the camera will pan to focus on the landmarks automatically.
NB this achievement may not visually pop in the UI, so check your Xbox profile afterwards to see.
Hydroplaning
LegendaryAccumulate 50 hours of flight time in rainy weather.
In free flight you can manually change the weather - or leave it a bit and this will naturally come over time as you grind out many of the other long flights, then you can top up as needed.
Century Club
LegendaryAccumulate 100 hours of flight time in a single pilot profile.
Service with a Smile
LegendaryRequest each type of pre-flight Ground Service while at an appropriate airport gate.
Instrumental
LegendaryAccumulate 50 hours of IFR flight time, including at least one take-off and landing.
Flights of Fancy
LegendaryComplete flights of at least 300 miles using a prop, jet and airliner.
Greased
LegendaryComplete every Landing Challenge.
The Landing Challenges are under Activities off the main menu.
You just need to successfully come to a standstill - you don't need to taxi all the way to the stand.
You can keep track in-game of how many you've done in your Pilot Profile in the Achievements tab, but not which ones. Tick them off here!
Anemoi
LegendaryComplete the Balkans Bush Trip, without using any navigation assistance.
"without using any navigation assistance" basically means don't use the "get back on track" button. I.e. you have to navigate the path visually yourself!
Goldrush
LegendaryComplete the Nevada Bush Trip, without using any navigation assistance.
"without using any navigation assistance" basically means don't use the "get back on track" button. I.e. you have to navigate the path visually yourself!
Fire and Ice
LegendaryComplete the Patagonia Bush Trip, without using any navigation assistance.
In The Wild
LegendaryUse the Smart Cam to view animals for 3 seconds, from a distance of 550 yards or less.
Night Owl
LegendaryAccumulate 50 hours of flight time at night.
Saddle Sore
LegendaryComplete a flight of at least 8 hours with a propeller or turbo-prop aircraft.
SIDs and STARs
LegendaryLand at every star airport shown on the World Map.
Frequent Flyer Miles
LegendaryFly from LFBD airport near Asobo Studio to KSEA airport near Microsoft HQ.
This is a long way - and should be used to count toward
NB you can't do this in one hop - even in a 747 - so you'll have to stop for a layover somewhere.
Job Shadowing
LegendaryCreate a flight plan based on a Live Traffic aircraft, then fly the route without assistance.
My Way
LegendaryComplete a non-stop 300+ mile flight from parking to parking spot, without assistance.
